These wings are a local favorite — golden, caramelized, and perfectly spicy thanks to Springs Fireplace Tesuque Hot Sauce. The glaze combines butter, honey, and heat for a balanced flavor that clings to every crispy bite. Serve them hot off the oven (or air fryer!) with fresh scallions and cilantro for a vibrant, crowd-pleasing finish.

Ingredients:
● 1 lb chicken wings
● 1 tablespoon olive oil
● Salt and pepper, to taste
● 4–6 tablespoons Springs Fireplace Tesuque Hot Sauce, divided
● 1 tablespoon local honey
● 2 tablespoons good-quality butter
● Chopped scallion and cilantro, for garnish
Instructions:
For the Sauce:
1. In a small sauté pan, melt butter over medium-low heat.
2. In a stainless-steel bowl, combine 2 tablespoons Springs Fireplace Tesuque Hot Sauce, honey, and melted butter. Mix well and taste — add more hot sauce for extra heat. Set aside.
For the Wings:
1. Prep the Wings:
Wash and pat dry the chicken wings with paper towels. Season generously with salt and pepper.
2. Marinate:
Add wings to a large Ziploc bag with 2 tablespoons Tesuque Hot Sauce and olive oil. Seal and shake (or massage) until evenly coated. Marinate for at least 20 minutes — or overnight for maximum flavor.
3. Cook the Wings:
- Oven: Preheat to 400°F and bake for 45–60 minutes, flipping halfway.
- Air Fryer: Set to 360°F and cook for 10–15 minutes until golden and crisp.
4. Glaze and Char:
Brush the cooked wings with the prepared sauce and return to the oven or air fryer for an additional 5 minutes until sticky, shiny, and slightly charred.
5. Serve:
Arrange on a platter and garnish with chopped scallion and cilantro. Serve with extra Tesuque Hot Sauce on the side for dipping.
