Grown in our East Hampton fields and hand-harvested at peak ripeness, these peppers are preserved in vinegar whole to capture their intense aroma and delicate fruitiness. Crush one (or a few) into the base of a soup or sauce to let its flavor bloom — we love them in the base of a mulligatawny-style Indian soup or simmered into a rich enchilada sauce. You can also eat them whole or add the infused vinegar to a bright, spicy dressing.
However you use it, this rare pepper transforms any dish into something extraordinary. There’s a reason it’s considered the most expensive pepper in the world — she’s a beauty.
